I wanted to create an easier version of the ice cream I've been making for some time.

There is also a separated egg version of this recipe. Ice cream will have a lighter texture when using separated egg method.

  2. 200 mlHeavy cream or whipping cream
  3. 6 tbspSugar

Steps

    Put the eggs and 3 tablespoons of sugar in a bowl and whip with an electric mixer until ribbons form on the surface.

    In another bowl, add heavy cream and 3 tablespoons of sugar. Using the same electric hand mixer, whip until soft peaks form. You don't need to rinse the mixer.

    Gently fold the egg mixture into the whipped cream. The mixture should be thoroughly combined.

    Pour the mixture into containers and freeze. You don't need to mix in the middle. If you like it sweeter, increase the amount of sugar.

    This can make quite a bit of ice cream so I added chocolate cookies into 1/2 of the ice cream.
