Brilliant biryani

Normally biryani takes a long time to make but this cheat version takes just 40 minutes and still packs in a lot of flavour. Only trouble is I can’t stop eating it.

Rinse the rice in water until it runs clear. Trim the fat off the chicken thighs and cut into 3 pieces.

Melt the butter in a pan. Slowly fry the onions in the butter, along with the cinnamon, cardamom and bay for about 10 minutes.

Add the turmeric, chicken and curry paste. Cook for 5 minutes. Then add the rice, stock and raisins. Put the lid on the pan and bring to the boil, then simmer for 5 minutes. Remove from the heat and led stand covered for 15 minutes. Serve with yogurt and fresh coriander.
