Easy Microwave Kabocha Squash Kinpira for Bentos

I love kabocha squash boiled in miso, and I had some kidney beans - so I thought of this recipe. It's easy to make but has a taste stronger than usual simmered dishes, so it's best suited for bentos. Try varying the basic recipe.

Adjust the cooking time depending on your home microwave. Mixing it twice while you cook in the microwave will help keep the flavor from becoming inconsistent. Tastes delicious even if it falls apart. For 3 small cupcake liners. Recipe by Tamochan

Ingredients

3 servings
  • 1/6Kabocha squash
  • 1 tsp☆ Soy sauce
  • 1/2 tsp☆ Sugar
  • 1 tsp☆ Sesame oil
  • 1Kidney beans
  • 1Sesame seeds (white or black)
  • 1Bonito flakes

Steps

    I used 1/6 of the squash but you can adjust the amount to use.

    Slice it thin and then into thin strips. ( Be careful because it's hard )

    Put it in a microwaveable container and add all ☆ ingredients. Mix it at this point. Cover it and heat it up in a microwave for about 2 minutes. Take it out from the microwave once and mix it the second time and cover it again and heat in the microwave for about another 1 minute. The basic dish is ready now. I sprinkled with some various toppings as shown below.

    With sesame seeds.
