Daal Chawal (वरण भात)

Sometimes, in the quest to make elaborate recipes, we tend to overlook our simple and traditional recipes. In Maharashtrian cuisine, any meal is incomplete without the cooked yellow toor daal which is called Varan and steamed rice which is called bhat. It's served piping hot with ghee, pickle and a lemon wedge. It's a heavenly and delicious combination. Rich with all the essential vitamins and proteins, it's a complete meal.

Steps

First, wash the lentils and rice separately and soak in clean water in separate containers for 1/2 an hour.

Then adjust the water to a level when you dip your finger, the water touches the first line on your finger.

Add turmeric powder, washed methi seeds, hing and oil to the daal. For the rice, wash and add water as mentioned. Add 1 tsp ghee and 1 tsp salt and mix well.

Cook the daal and rice in pressure cooker for 4 whistles. You may cook rice in an open pot while stirring constantly, drain excess water (use it for other purposes) and close the lid. Open after 10 minutes to get fluffy rice.

After pressure subsides, open lid and mash the daal well. Transfer to another container and boil for 5 to 7 minutes. Add salt, jaggery and ghee. The Varan or daal is ready to serve.

Serve rice in the shape of a bowl and add the varan on top. Pour 1 tsp full ghee on top. (I gave a tadka of ghee, cumin seeds, hing and turmeric powder) Serve with lemon wedge, pickle and papad if you like. Enjoy delicious Varan Bhat.
