Delicious meatballs made with ground beef (but you can also make them with pork or shrimp).

Chop the carrot, potato, onion, and tomato. Sauté them with a few bay leaves and your choice of spices. Cook for a few minutes, then add the tomato puree.

Bring to a boil to precook the vegetables.

Mix the rice with the ground beef until well combined, then form into meatballs.

Prepare a broth by blending the tomatoes, onion, spices, oregano, chipotle, chicken bouillon, pepper, and garlic cloves. Bring to a boil and simmer for 10 minutes to concentrate the flavors.

Add the meatballs to the prepared broth and add more water as needed.

Cook for 20 minutes, until the vegetables are tender and the flavors have blended. Check and adjust salt as needed.
