- 1
Put a large pan on heat and add oil. Add 2 medium cinnamon, 9 cardamom pods, 1 tsp of salt, 1 tsp peppercorns, 3 bay leaves, 2 star anise, 9 cloves. Stir fry for a few seconds until fragrant
- 2
Add 3 medium onions. Fry them till tender. Add 500g cooked beef, increase heat and cook for 3 minutes. Then stir
- 3
Add 1 tbsp of garlic paste and cook for about a minute or until the raw smell of garlic disappear. Add 250g of potatoes and stir to mix everything well.
- 4
Add 1 tbsp of salt. Then stir. Cover and cook for 5 minutes on a low heat. Add 2 cubes of bouillon and 1 tbsp garam masala and mix. Add 2 1/2 cups of soaked rice, 1 tbsp of rose water and 2 1/2 cup of beef stock.
- 5
Stir a bit to mix and let it cook by itself till no water is seen. Cover the pot, reduce heat and simmer without lifting a lid.
- 6
After 7 minutes the water will reduce drastically. Open the lid and use alluminium foil, crimped tight over the top of the pot to make a good seal so the steam doesn't escape.
- 7
After 5 minutes open the lid and fluffy your pilau. Then check is your pilau is well cooked. If not cover and cook for more 5 minutes.
Fluffy the pilau and enjoy
