On this hot election morning, this was all i had in mind 😀. Chop and sleep kind of food.

Ingredients

4 servings
  1. 2 cupsfresh corn
  2. 2 cupsbrown beans
  3. 1big spring onion
  4. Seasoning and salt
  5. Grinded dry prawns
  6. 2cooking spoons palm oil
  7. 6scotch bonnet peppers

Cooking Instructions

    Add the beans in a pot and boil for 5 minutes then pour out the water and run clean water on the beans

    Add the beans back into the pressure pot with the corn and some little seasoning and cover to cook

  3. 3

    In a separate pot, preheat the palm oil and add the onion, prawn, pepper and spring onion

  4. 4

    Add little seasoning and salt and set aside

  5. 5

    When the corn and beans mix is cooked to tender, pour it into the oil mixture.

  6. 6

    Stir well to mix and taste for season. Adjust if needed

  7. 7

    Allow to cook for an extra 5minutes

  8. 8

    Serve with some ripe fried plantain

  9. 9
