Once again my step daughter and I went and found a recipe and used the base of it to make it our own. We changed up ingredients to cater to our tastes. I hope you like this version Leela and I created. So quick and easy to put together too.

Cooking Instructions

You can either used freshly made chicken or shred a premade rotisserie chicken.
I boiled boneless skinless chicken breasts in a good chicken stock to prepare my chicken. I placed raw chicken in cold broth and brought to a boil. Then lowered temp to simmer. Simmered for 20 minutes or until cooked. Then poured out cooking liquid. Let them cool a few minutes before shredding them in the food processor. They came out delicious and moist and tender. - 2
In a large mixing bowl add chicken and jalapeno dip. Mix well.

Next add in sliced jalapeno, mozzarella cheese (leave 2 ounces aside to top before baking) cauliflower mix, salt and cayenne. Mix well.

In a baking dish spoon in mixture. Top with the reserved cheese. Bake in a 375 degree preheated oven for 30 minutes. Enjoy!

That happened this afternoon, as I brainstormed for a way to combine leftover gorgonzola we had in the fridge with some mushrooms a neighbour brought over.
