I've tried out many methods for making sandwiched lotus root, and this is the one I've settled on.

Ingredients

3 servings
  1. 1 pieceabout 15 to 20 cm long Lotus root
  2. 150grams~200 grams Ground pork
  3. 1the white part Japanese leek
  4. 10leaves Shiso leaves
  5. 1 tbsp●Miso
  6. 1 tbsp●Sake
  7. 1 tbsp●Mirin
  8. 2 tsp●Katakuriko
  9. 1Sesame oil
  10. 1Ponzu etc.

Steps

    Peel the lotus root, cut into 7 mm slices, and soak in a bowl of water with vinegar.

  2. 2

    Finely chop the leek and shiso leaves. Combine with the ground pork and the ● ingredients and mix well.

  3. 3

    Dry the lotus root slices well, and sandwich the meat mixture between two slices.

  4. 4

    Put a generous amount of sesame oil in a pan, and pan fry the lotus root sandwiches over low heat for 5 minutes on each side, until golden brown. They burn easily, so watch carefully!!

  5. 5

    I recommend using ponzu sauce as a dipping sauce. Or you can use ponzu sauce + ground sesame seeds, ponzu sauce + mayonnaise and Japanese style Worcestershire sauce.
