Ingredients

4 people
  • 1 cupmacaroni (like curved tubes)
  • 1 tbspoil and 1 tsp salt to cook macaroni
  • 1 tbspghee
  • 1 tbsp(heaped) maida
  • 2 cupsmilk
  • 1/4-1/2 cupgrated cheddar/gouda cheese (should have creamy flavor and texture for better results)
  • 2-3 tspsugar
  • 1/4 tspsalt
  • 1/8 tspblack pepper powder
  • 1/2 cupgrated Mozerella cheese

  1. 1

    Add macaroni in boiling water along with salt and oil. Cook till they are soft. Drain out water and run tap water to stop further cooking. Apply oil so they do not stick. Keep aside.

    Heat ghee in a thick bottom pan. Add maida and roast on low flame till it changes colour, leaves aroma and oil starts to float on the surface. Stir continuously while waiting for this stage.

    Use a whisk from this point onwards. Add milk a little at a time, while stirring continuously to break the lumps.

    Let it boil while stirring often to avoid scorching. Add sugar, salt and black pepper while the sauce thickens. It should not be very thick, but as much as it shows that the flour has blended well with milk and is now cooked. If you deep the spoon in suce, there ll be a thin quote of it on it.

    Add macaroni and cheese at this point. Mix well. Adjust salt and sugar if needed.

    Transfer the mixture in the baking tray. Cover it with mozerella cheese and GRILL at 180c for 5 -7 min or until you see brown spots on the top.

    Serve hot with sweet tomato ketchup. This combo is delicious!

    Tips
    1. The white sauce must have the right consistancy. Very thick sauce will make the dish dry after baking. And the dish will not taste creamy if the sauce is too thin.
    2. The sauce should be sweet and a little salty.
    3. Do not bake, but grill the dish
    4. Do not use the processed cheese.
    5. You may also add some pineapple if you like.
    6. The measurement given here is estimated. You may adjust the taste and quantity as per your need.
