Ingredients

  • 20medium carrots, peeled, cut in 2 inch sections
  • 1yellow onion diced
  • 1 Tablespooncoconut oil
  • 1 Tablespoonginger
  • 1 Tablespoonturmeric
  • 1 teaspooncurry powder
  • 2 cupschicken broth
  • 1 cupcoconut milk
  • 1 Tablespoonfish sauce
  • Salt to taste
  • White pepper to taste

Steps

  1. 1

    Melt oil and sauté onion ginger and spices

  2. 2

    Add carrots and broth

  3. 3

    Cook in IP on high 10 minutes

  4. 4

    Purée with immersion blended adding coconut milk until desired consistency adding fish sauce, salt and pepper to taste
