Ingredients

35 mins
makes 9 servings
  1. 1 (400 g)tin cannellini beans drained,
  2. 100 gpeeled & grated carrot,
  3. 2spring onions, chopped finely,
  4. 1large egg,
  5. 50 gplain flour,
  6. 1 tspsmoked paprika,
  7. 1 tspdried oregano,
  8. 1 tspgarlic paste,
  9. Salt & pepper to season,
  10. 2 tbspcooking oil for frying
  11. To garnish:
  12. 30 greduced fat crumbled feta cheese,
  13. Red chilli flakes (optional),
  14. Sliced spring onion greens
  15. For the dipping sauce:
  16. 2 tbsplighter crème fraiche,
  17. 1 tbsplemon juice,
  18. 1/2 tspgarlic paste,
  19. 1 pinchsalt

Steps

  1. 1

    Mix together the ingredients for the dip and then put in the fridge for later. Heat the oil up over a medium low heat in a non stick frying pan or skillet.

    In a bowl add the cannellini beans, dried oregano, salt, pepper, smoked paprika, spring onions & garlic paste. Mix together well. Using a potato masher, mash the seasoned beans until broken down and no full beans remain.

  3. 3

    Add in the egg. Grate the carrot and using kitchen towel squeeze out any excess liquid. This will prevent the fritters becoming too wet. Add in the carrot plus the flour. Give everything a good stir. Set in the fridge for 10 mins to firm up.

  4. 4

    Take heaped tbsp of the batter & place in the hot oil 3 at a time, pushing them out into a flat round shape using the back of the spoon, fry for 2-3 mins each side until cooked through and golden brown.

  5. 5

    Serve up with the chilled dip and crumble the feta cheese over the top. Garnish with spring onion greens. Enjoy! :)
