  1. 1/2 cupchickpea flour (about 60 grams)
  2. 1/4 cupegg whites (about 60 grams)
  3. 1/3 cupwater (about 70 grams)
  4. 1 teaspoonextra virgin olive oil
  5. 1 pinchsalt
  6. Parsley and rosemary to taste

    In a bowl, combine the chickpea flour, a pinch of salt, and egg whites. Stir and gradually add the water, mixing until you have a smooth, lump-free batter. Incorporate the teaspoon of olive oil and finely chopped parsley and rosemary.

    Heat a small oiled pan, cook the frittata on one side until the edges dry. Use a plate or lid to flip it and cook the other side. Serve hot or cold.
