Soy and Nopal Quesadillas 🌮

Cooking Instructions

In a medium pot, heat 1 liter (about 4 1/4 cups) of water. Once it boils, add the soy chorizo, including the seasoning packet inside, and stir with a spoon until the water evaporates from the soy.

In a pan, heat the sliced onion to release its flavor and add a pinch of salt.

Once the onion is golden, add it to the soy chorizo and mix well.

Wash the nopales and place them in a colander. In a pan, cook the nopales until they lose their sliminess, then add them to the soy chorizo and mix again.

Place the soy chorizo mixture on a tortilla using a spoon and fry in oil.

Remove from the pan and serve to enjoy delicious Soy Chorizo and Nopal Quesadillas. I added a squeeze of lime and some cilantro, yum.
