Colorful Ground Pork and Vegetable Curry

I wanted to eat delicious curry cooked with a small amount of ground meat and plenty of vegetables!!
This dish has smooth texture, but it's satisfying.
The flavour of this dish goes well with spinach, tomatoes, edamame, kabocha, sweet potatoes, (any kind of vegetable, basically) so it's a good recipe to have around.

Cooking Instructions

Mince the vegetables into the same size as the ground meat. (I added the honey ginger, as illustrated in the picture.)

Heat oil in a frying pan, add garlic, and fry until fragrant. Add onion, carrot, pork, green pepper, bell peppers, and raisins in that order, and continue stir-frying.

Add the combined * seasoning ingredients, and bring to a boil. Thicken with dissolved katakuriko in water.

Enjoy with rice! Bell peppers and raisins are slightly sweet, and go well with curry flavour.

I adapted a curry recipe from "vege dining", a website I love.It is free of animal derived ingredients and doesn't use a lot of oil, so it's ideal to feed to small children as well.Add richness using sesame paste. You could probably use peanut butter instead. Adjust the amount of spices to taste. Reduce the curry powder for small children. Try to use preservative and MSG-free ketchup and sauce as much as possible.
