Steps

Paste for layering the Khaja : Mix ghee, oil & all-purpose flour to a paste. Keep aside.

Sugar syrup / chasni : Take sugar in a saucepan. Boil it till sugar melts & the syrup attains 1 thread consistency. Add saffron strands & cardamom powder & mix. Keep the sugar syrup warm.

Khaja dough : Take all-purpose flour in a bowl, add ghee & mix till the flour resembles crumbly. Make paratha type dough by adding water slowly.Cover & keep aside for 30 minutes. Then knead the dough very well so Khaja will be very soft.

Make 5 equal size balls from the dough. Take 1 ball & roll the 1st chapati slightly bigger than the other 4. Now take 1 chapati on the rolling board, apply paste all over it generously.

Make 4 more chapatis slightly smaller than the 1st one.Stack up all 4 chapatis one on top of the other after applying the paste generously, so that the layers will be seen easily when the Khajas are fried.

Now make a cylindrical roll from the stacked chapatis. Cut 1 inch pieces from the roll. Take 1 piece on the rolling board & keep it standing on it & roll a little flat & longish as shown in the picture. Roll all Khajas the same way.

OR you can roll Khaja round also. Deep fry them in hot oil on medium flame, so it will be fried till inside & will not remain raw.

When golden from all sides,drop the Khaja in warm sugar. Keep them in sugar syrup for 10 minutes. Remove them in a serving plate & offer them to Lord Jagannathji & let everyone take the "Prasad".
You can store these Khaja in airtight container for 15 days.
