Creamy, healthy cheesecake. You can blend 3.5 oz (100 grams) of blueberries or raspberries and add them to the mixture.

Ingredients

Serves 6 servings
  1. 4eggs
  2. 12 ozcream cheese (about 350 grams)
  3. 1/3 cuperythritol (about 80 grams)
  4. 3/4 cupheavy cream (about 180 grams)
  5. A fewdrops of vanilla extract
  6. Pinchsalt
  7. Optional: 3 drops liquid stevia
  8. Optional: 1 tablespoon bamboo flour
  9. Optional: 4 more drops liquid stevia for extra sweetness

Steps

    Mix the erythritol with the cream cheese until smooth.

  2. 2

    Add the eggs, heavy cream, and optionally the bamboo flour. Beat until the mixture is smooth and well combined.

    Pour the batter into a rectangular baking pan.

  4. 4

    Bake for 45 minutes at 350°F (180°C).

  5. 5

    For best results, refrigerate for a day to let it set and develop flavor.
