Ingredients

Serves 4 servings
  • 5egg yolks
  • 4 1/2 oz (130 g)chocolate
  • 1/4 cup (60 g)sugar
  • 2 1/2 tbsp (40 ml)heavy cream
  • 2 tbsp (30 g)light brown sugar

  1. 1

    Whisk the sugar with the egg yolks until pale and creamy.

  2. 2

    Heat the heavy cream with the chocolate until the chocolate is melted.

  3. 3

    Pour the cream mixture over the egg yolk and sugar mixture, stirring quickly.

  4. 4

    Pour the mixture into ramekins.

  5. 5

    Bake in a water bath for 1 hour at 265°F (130°C).

  6. 6

    Let cool in the refrigerator for 4 hours.

  7. 7

    Just before serving, sprinkle a little light brown sugar on each crème and caramelize with a kitchen torch.
