Wash the aubergine and peel. Cut in chunks. Sprinkle some water on aubergine and add cornstarch and toss so its covered in starch.

Deep fry until lightly golden and crispy.
In a bowl add 2 tablespoon water, ketchup, vinegar, garlic, ginger and chilli paste, sugar and soy sauce. Mix well. - 4

In a pan add oil and once hot add in the sauce and cook until its sizzling. Add in aubergine and stir. Once its all mixed turn off the heat and garnish with roasted peanuts and sesame seeds. Enjoy
