Slice the leeks into rounds and sauté them in a skillet with a little butter for 10 minutes until soft.

Unroll the puff pastry and place the lid from the cream cheese container in the center.

Spread the herbed cream cheese over the pastry.

Add the sautéed leeks on top.

Alternate placing a slice of goat cheese and 2 to 3 small pieces of smoked salmon over the leeks.

Fold the outer edge of the pastry slightly over the goat cheese.

Remove the cream cheese lid and cut the pastry (like cake slices) into 8 triangles, then fold each triangle over the goat cheese.

Mix the egg yolk with 2 tablespoons (30 ml) of water and brush it over the pastry.

Bake for 25 minutes at 350°F (180°C).
