First of all cut potatoes into wedges and dip them in cold water to remove the access starch. Then boil some water and put wedges in it and par boil the wedges. (Upto 60 %)and drain

Let the wedges cool to the room temperature.coat them with corn flour.Mix both the flours, add water to make a slurry to coating consistency.add salt,herbs,chilliflakes,paste,coriender and pepper powder.

Dip the wedges in slurry and fry at high flame till golden.

And our Potato Wedges are ready to serve. Serve it with Mayo dip and Salsa. Or dip of your choice
