Serves 6 servings
  • 1 1/2 lbsrhubarb (about 700 grams, fresh if possible)
  • 1 2/3 cupslow-fat milk (400 ml)
  • 3/4 cupheavy cream (200 ml)
  • 1 cupspelt flour (125 grams)
  • 5eggs
  • 2/3 cupgranulated sugar (130 grams)
  • 2 tablespoonslemon curd

40 minutes
  1. 1

    Wash and peel the rhubarb stalks.

    Cut the rhubarb into small cubes. Crack the eggs into a large mixing bowl.

    Add the sugar and beat with an electric mixer until the mixture is pale and fluffy.

    Add the milk and cream. Preheat the oven to 375°F (190°C).

    Beat again. Sift in the flour and add it all at once.

    Beat again, then add the lemon curd and mix well.

    Add the rhubarb and pour the batter into a baking pan.

Tips

Comment réussir facilement des gâteaux

Lorsque je fais des gâteaux je tamise systématiquement ma farine avec la levure

Comment éviter que les gâteaux attachent à la cuisson ?

J utilise principalement des moules souples en silicone, inutile de les beurrer, les préparations n attachent pas et le démoulage est super facile

Comment faire lorsqu un moule à gâteau est trop petit ?

Lorsque j ai mal estimé la quantité de pâte par rapport à la contenance d un moule je remplis un mini moule et je cuis les deux gâteaux en même temps

Comment bien faire refroidir des gâteaux

Pour faire refroidir des gâteaux je les les sors toujours du four avec la grille
