Ingredients

Serves 2 servings
  1. 1 tablespooncapers, preferably small
  2. 1/3 cupred bell pepper, diced small (about 50 grams)
  3. 1 tablespoonchopped cilantro
  4. 4green olives, pitted and chopped
  5. 1/2 cuptri-color quinoa (about 85 grams)
  6. 1/2 tablespoonolive oil
  7. 1 clovegarlic, minced
  8. 1/4 cuponion, diced (about 35 grams)
  9. 1/3 cupcelery, diced small (about 35 grams)
  10. 1/3 cupcarrot, diced small (about 40 grams)
  11. 1 cupwater (240 ml)
  12. 1/2 teaspoonsalt

Steps

  1. 1

    In a small pot, heat the olive oil and sauté the garlic, onion, celery, red bell pepper, and carrot together.

  2. 2

    Add the water and salt, and bring to a boil.

  3. 3

    Stir in the quinoa and cook over low heat until the liquid is absorbed, about 12 minutes.

  4. 4

    Mix in the capers, chopped olives, and cilantro, then serve.
