Ingredients

45 minutes
Serves 4 servings
  1. 3 cupscooked brown rice (leftover rice is fine)
  2. 9 ozshrimp, peeled and deveined (about 250 grams)
  3. 2eggs, beaten, cooked as an omelet and cut into cubes
  4. Vegetable oil
  5. 2 teaspoonssesame oil
  6. 1 clovegarlic, minced
  7. 2 teaspoonsginger, minced
  8. 2 tablespoonsshallots, diced
  9. 1 cupred bell pepper, diced
  10. 1 cupbroccoli florets, cut into small pieces
  11. 1 cupcooked edamame
  12. 3 cupsbean sprouts
  13. 1 tablespoonsoy sauce
  14. Salt to taste
  15. 1 tablespoonchopped cilantro

Steps

45 minutes
  1. 1

    Heat 2 tablespoons vegetable oil and the sesame oil in a wok or large skillet. Stir-fry the shrimp until they turn pink. Set aside.

    In the same oil, stir-fry the garlic, ginger, and shallots for a few seconds.

    Add the bell pepper and broccoli. Stir-fry until just tender-crisp. Add the edamame and bean sprouts.

    Add the brown rice and cubed omelet, and heat through.

    Add the shrimp and mix well. If the shrimp are large, you can cut them in half lengthwise.

    Serve and sprinkle with chopped cilantro.
