Heat 2 tablespoons vegetable oil and the sesame oil in a wok or large skillet. Stir-fry the shrimp until they turn pink. Set aside.

In the same oil, stir-fry the garlic, ginger, and shallots for a few seconds.

Add the bell pepper and broccoli. Stir-fry until just tender-crisp. Add the edamame and bean sprouts.

Add the brown rice and cubed omelet, and heat through.

Add the shrimp and mix well. If the shrimp are large, you can cut them in half lengthwise.

Serve and sprinkle with chopped cilantro.
