Pau bhaji, Mumbai 's roadside meal on the go

Pau bhaji more than a mere snack , it is a meal on the go as large portions of bhaji are made in advance & reheated. One has to only wait for pau to be toasted & served with oodles of butter , chopped onions & lemon wedges. One just tends to loose himself & the aroma of Pau-bhaji makes him forget himself as he dunks into it .

For the chilli - garlic paste : Soak red chillies in warm water for 1 hour. Discard water & grind soaked chillies, garlic, oil & salt to fine paste. Remove in a bowl. Keep aside.

Bhaji : Heat oil & butter in a pan & saute cumin seeds. Add chilli -garlic paste.Than add onions, saute till pink. Add capsicum & saute well.Lastly add tomatoes & cook them till soft.

Add pau bhaji masala, red chilli pwd & coriander. Add salt.Mix well. Add 1/4 cup water & mix. Add green peas & potatoes & cook for 5 minutes so everything will merge very well. Mash a little.
Garnish with coriander. - 4
Pau : Slit 2 pau horizontally.Take butter on the tawa. Add1/4 t.sp pau bhaji masala & coriander. Slit open the pau & place on hot tawa. Cook both the sides till butter, pau bhaji masala & coriander stick on the pau. The pau should be soft. Remove.

Assembling Pau-bhaji plate : Put 2 pau, bhaji, onions,lemon wedges & papad in a plate. Garnish with coriander. Serve immediately. Make 3 other plates the same way.
