Ingredients

30 minutes
12-15 servings
  • 3 cupscake flour
  • 1/2 cupsugar
  • 3 tspbaking powder
  • 1/2 tspbicarbonate of soda
  • 1/2 tspsalt (optional)
  • 125 gbaking margarine (or butter)
  • 1 cupmilk + 2 Tbsp lemon juice
  • 1 tsplemon extract (or any preferred flavoring)
  • 1/2 cupraisins
  • 1egg for the egg wash

Steps

30 minutes
  1. 1

    Mix milk and lemon juice. Let stand to curdle

    Buttermilk substitute
  2. 2

    Preheat oven to 200C. Grease a cookie sheet with butter, dust it up with flour and set aside

  3. 3

    In a large bowl, whisk dry ingredients to thoroughly mix

  4. 4

    Rub butter into dry mixture until resembling breadcrumbs. Pour in the milk, flavoring and raisins. Mix and bring dough together with your hands. DO NOT OVERMIX

  5. 5

    Flour your countertop and roll your dough about 3.5cm thick. Cut into shapes using a preferred cutter or knife

  6. 6

    Lay on the prepared sheet, whisk the egg and brush it onto the scones

  7. 7

    Bake for 20 minutes depending on how thick you cut your scones. Check that the bottoms are browned and the tops lightly browned

  8. 8

    Let scones cool completely on a rack to keep from getting soggy. Store in an airtight container and consume within 2 days to have them at their best

Tips

Buttermilk substitute

Add 1 tbsp of vinegar or lemon juice to 1 cup of milk.
