Swedish White Bread is the secret to the juicy meatballs at Ikea. In one form or the other, this luxury bread is made all over the world. Here are my air fryer recipes for the bread, the meatballs, and the creamy sauce.
I also added a 15 minute method to make mashed potatoes and cook fresh zucchini in a single cast iron skillet. Dinner in half an hour.

Ingredients

Prep 15 minutes, air fry 15 minutes
2 people, 4 dinners
  1. For the sauce:
  2. 1/4 cupUnsalted cultured butter
  3. 1/4 cupOrganic Red Cow Heavy cream powder, (amazon), makes 1/2 cup
  4. 1/4 cupAll purpose cake flour
  5. 1 cupBeef broth
  6. For the meatballs:
  7. 2 slicesfrozen White luxury bread, crusts removed, save for soup
  8. Air fryer Bread
  9. 1 poundGround pork, no more than 20% fat
  10. 1 poundGround beef, no more than 20% fat
  11. 1large Fresh farm egg
  12. 1/2 cupchopped white mild onion
  13. 1/2 TspCracked green peppercorns
  14. 1/2 TspFresh grated nutmeg
  15. 1/2 TspGround all spice
  16. For the mashed potato and steamed zucchini
  17. 2diced yukon, russet or red potatos, skin on
  18. 1 cupBeef broth
  19. 1 cupwater
  20. 4 sliceszucchini per person, quartered
  21. 1 Tspsea salt
  22. 1 Tspcracked green peppercorns
  23. Equipment: cast iron skillet, potato masher or food mill, sauce pan, whisk, dough maker, air fryer
  24. Cost: pound meat $6, sauce $1, other $1, $2 per dinner

Cooking Instructions

Prep 15 minutes, air fry 15 minutes

    Start with zucchini and potatoes in cast iron skillet. Cover with beef broth, add water as needed till submerged, boil 15 minutes. Set vegetable
    aside, covered. Pour left over cooking liquid in cup. Keep cooked potatoes in dry hot skillet one more minute to firm up.

    Mashed potatoes taste creamier when put through the food mill. Put cooked potatoes in foodmill with pepper and some cooking liquid, mash, or use potato masher. I used red potatoes because my russet and yukon potatoes are getting mealy this time of year, just before the new crop comes in. The food mill keeps the potato skins in the mill but you get the vitamins.

    Make sauce. Add cream powder and all purpose cake flour to luke warm beef broth in sauce pan, whisk, add cultured butter, melt and whisk, bring to boil, cover, set aside.

    Thawing white bread takes 3 minutes. Remove crusts and save to make soup later, dice bread.

    Size meatballs to cook evenly and juicy in your air fryer. It takes one or two tries to find the perfect size so they dont touch and cook in and out perfectly. I make meatballs that are a heaping tablespoon each, four meatballs per cup of meat, 16 meatballs per dinner for two. Mix meats, onions, bread, spices in dough maker, knead throughly, make meatballs, single layer on bottom of air fryer, not touching each other. Air fry 15 minutes at 400F degrees.

    Serve on big dinner plate with mashed potato in center, meatballs on top, vegetables on the side, lots of sauce on top, nutmeg dusting on top of that, enjoy.
