Crispy Honey Glazed Plaintain/Banana Fritters

I recommend using plaintains, although you can try using banana as well. Difference is, Plaintain is firmer and sweeter (better caramelized) when deep-fried, while banana will become more mushy when deep-fried.
Perfect for snacking and comes really good with an ice cream too.

Cut the plaintains into small pieces, not to thick, but not to thin either.
Tips: It's better to wait until the plaintain's skin turns black as the plaintains is at it's peak ripeness (just right level of sweetness and texture). If it's still yellow like in my picture, the texture is a bit too firm (but I just can't wait 😬)

Mix the flour, rice flour, sugar, and coconut cream. Then, little by little, add water until you get batter with consistency as in the video bellow

Put in the plaintain cuts into the batter, mix well until the plaintains all covered with the batter.

Deep fried for 12 minutes.
Tips
- Do not put in the plaintains before the oil gets very hot.
- They float, so flip them mid-way to ensure all sides cooked equally - 5
At this point, it's actually already pretty good if you want to stop and just eat them.
But I'm in for an even sweeter treat. So I prepare a solution of 6 tbsp honey + 6 tbsp water, dip them, and add another 3-5 minutes of deep frying.

And there you go. Shiny, honey-glazed crispy plaintain fritters.
