Rinse the chicken strips and pat dry. Wash the green onions with potable water, dry, and chop finely; set aside. Cut the chicken strips into strips; crush the garlic and chop finely.

Marinate the chicken strips with the marinade and 2/3 of the minced garlic; let sit for 10 minutes.

Cut the potatoes and carrot into large dice. Heat a frying pan, add the diced potatoes and carrots in a single layer. Sear until one side is colored, then flip. Once all sides are colored, add the remaining 1/3 of the minced garlic and stir-fry until fragrant, then remove from the pan.

In the same pan, add a bit of olive oil and sear the chicken strips over high heat without moving them initially. Once one side is colored, flip and sear the other side until both sides are colored. Add the diced potatoes and quickly stir-fry to combine.

Pour the soy sauce along the edge of the pan, taste and adjust seasoning if needed, sprinkle with chopped green onions, and mix well before serving.
