Ingredients

Serves 5-6 servings
  1. 1 1/2 cupscouscous (about 270 grams)
  2. 3tomatoes, diced (or an equivalent amount of cherry tomatoes, halved)
  3. 3-4small cucumbers, diced
  4. 1small onion, finely chopped
  5. 1 1/2 cupscooked chickpeas (about 250 grams)
  6. 1 clovegarlic, minced
  7. 7-10 ouncesfeta cheese, cubed (200-300 grams)
  8. 1/2 bunchparsley, finely chopped
  9. 5-6 tablespoonsolive oil
  10. 2 tablespoonsvinegar
  11. Salt

Steps

  1. 1

    Cook the couscous according to the package instructions, then rinse and drain. Let it cool.

    Combine all the ingredients in a large salad bowl and mix well.

  3. 3

    Serve the salad immediately or refrigerate and enjoy it chilled. It's that quick and easy!
