In a large pot, bring the pork shank and corn (cut into thirds) to a boil. Add salt, a piece of onion, and garlic cloves. Cook until the meat and corn are fully cooked.

Meanwhile, cut the carrots, green beans, potatoes, and Mexican squash (or zucchini) as desired.

In a separate pot, boil the chiles for 10 minutes. Remove the seeds and veins, then blend with 2 garlic cloves and another piece of onion. Season with salt and fry the sauce in a small pot.

Add the vegetables, chile sauce, epazote, and bay leaves to the large pot. Adjust seasoning. Separately, blend the masa harina with a little broth and add to the pot. Cook for 15 minutes.
