Ingredients

  • Ingredients to season the fish
  • 10 1/2 ozflounder, hake, or sea bass (300 grams)
  • 1 tablespoonchopped fresh oregano
  • 1/4 teaspoonground cumin
  • 1large clove garlic, minced
  • 1/2 teaspoonsalt
  • 1/4 teaspoonground black pepper
  • 1 tablespoonall-purpose flour
  • Ingredients for dipping sauce
  • 2/3 cupmayonnaise (about 160 ml)
  • 1 tablespoonchopped green onions
  • 1 tablespoonchopped green olives
  • 1 tablespoondiced roasted red bell pepper
  • 1 tablespoonchopped parsley
  • 1/2 teaspoonDijon mustard
  • Batter for the fish
  • 1/2 cupsifted all-purpose flour (about 60 grams)
  • 1/4 cupsifted rice flour (about 30 grams)
  • 1/4 cupsifted cornstarch (about 30 grams)
  • 1/2 teaspoonsalt
  • 1/4 teaspoonground black pepper
  • 3/4 cupcold beer plus 2 tablespoons (about 200 ml)

Steps

  1. 1

    Pat the fish dry with paper towels. Season the fish with oregano, cumin, garlic, salt, and pepper.

    Make the dipping sauce. In a bowl, combine all the ingredients for the sauce and mix well.

    Prepare the batter. Sift the all-purpose flour, rice flour, and cornstarch, then mix them in a bowl with the remaining batter ingredients.

    Sprinkle the fish with 1 tablespoon of flour and shake off any excess.

    Heat the oil. Dip the fish in the batter and fry until golden brown.
