Ingredients

100 minutes
3 servings
  1. 250 gmpre-boiled lentils
  2. 4 cupswater
  3. 2 cupsrice
  4. Condiments of your choosing
  5. 1medium onion bulb
  6. 2medium sized tomatoes
  7. Pumpkin
  8. Dhania
  9. Carrots
  10. Preparing the pumpkin vegetable rice
  11. In a clean pot, pour a little oil, let it heat up and add in your diced pumpkins. Let them saute for a few minutes as you add your favourite spices. Add in 2 cups of washed rice, and stir it in
  12. Once you're satisfied with the colour:condiments ratio add in 4 cups of water and cover tightly with a lid. Turn your heat to a medium setting and once it starts boiling, turn it to the lowest setting
  13. In about 12 minutes, your rice is ready. Turn off the heat and fluff up your rice

    Assemble all ingredients and chop up all the vegetables.

    Turn on your cooker and place your cooking pot and put in a little vegetable oil and add in your onions.

  3. 3

    Add in your spices, I like to add them in at this step cause it gives the food aroma.

    Add in your carrots and let them saute for a few minutes

  5. 5

    Add in your chopped tomatoes, and a little salt, and cover the mixture.

  6. 6

    After 3 minutes, add in your pre-boiled kamande(lentils) add some water cause the juices might thicken.

  7. 7

    Cover the mixture and let it simmer for 5-10 minutes, this is to let the lentils absorb the flavours in the stew.

  8. 8

    Once the water has reduced to a gravy, turn off the heat.

  9. 9

    Serve the stew together with the rice. You can add a refreshing drink, a fruit dessert or an avocado like I did.
