I’m on a quest for traditional meat snacks from various cultures and during that quest I stumbled upon Suya. Oh how I love Suya! Suya originates from Northern Nigeria but apparently can be enjoyed anywhere in Nigeria.
I was initially skeptical about adding peanuts to my steak but after this, I’m sold and there’s no buying me back.

Grind peanuts in a coffee grinder until finely crushed but not formed into a paste

Prepare SUYA SPICE: mix all spices with ground peanuts in a bowl. Pat beef pieces dry with a paper towel and massage a tablespoon of oil and half of the spice mix into the beef. Cover bowl with cling firm and marinate in the fridge for an hour or overnight

Soak the skewers in water for at least 20 minutes. Thread beef strips onto the skewers, about 3 - 4 per skewer for the meat to cover most of the skewer

Dab the skewered beef all around with the rest of the Suya spice mixture. Then line your airfryer with foil and place the skewers on

Drizzle with oil and air fry at 200C for about 20 -25 minutes

Serve fresh from the oven and enjoy 😉
