This is my first recipe! My mom taught me how to make it, and I can't stop making it. Any constructive feedback is welcome :)
Rajas with Cream, Cheese, and Corn
This is my first recipe! My mom taught me how to make it, and I can't stop making it. Any constructive feedback is welcome :)
Steps
- 1
First, slice the peppers, onion, and garlic.
- 2
Heat a pot and add 2 tablespoons of butter and a little oil. Once the butter is melted, add the onion.
- 3
When the onion is slightly translucent, add the peppers and finely chopped garlic. Stir and let cook for 15 minutes.
- 4
After 15 minutes, add the drained canned corn to the pot. Mix and let cook for 12 to 15 minutes, depending on how cooked you want the peppers. Stir all the ingredients frequently.
- 5
When the time is up, add 3 heaping tablespoons of sour cream and 3 to 4 tablespoons of chicken broth. (Adjust these amounts to taste.)
- 6
To finish, add cheese. I used mozzarella.
- 7
Let the cheese melt and blend with the other ingredients, and you're done!
- 8
I hope you enjoy this recipe as much as I do. The butter is optional and doesn't change the flavor much.
