Sweet potato dessert

These are the orange peach sweet potato,now available in grocery stores at bit reasonable priced alhamdulillah.Please note that use that you may like to use the less stringy ones and you will know this on peeling and coping in halves and if stringy .But in this case the string was minimal and actually tolerated .as it was almost unnoticeable on eating mayb leave amd use other ones.thats the trickiest part of this recipe I wud say!All the best
This is just boiled potatoes as far as cooking part is concerned.if prefer you can let cool remove the peels and mash simply with fork and mix in the condenced milk and then simply microwave fir the coconut milk ..then briskly mix /whisk with fork inshaallah will be sufficient.if u prefer more smoother you may blend eg hand blend but if soft enof it will mash easily
Serve this chilled for better results.
This here we had to add dash of milk about 3 tablespoons because after microwaving about 30 seconds on adding coconut powder ,it was bit dry that's the reason for extra milk

Ingredients

  • 2medium small sweet potatoes
  • 4 tablespooncondenced milk
  • 1 tablespooncoconut powder
  • few pinches cinnamon powder(lidl dies really good ones)
  • Dashmilk (or as needed)

Steps

  1. 1

    Boil potatoes cover with enough boiled kettle water for ease and save of power I gues!

    And once soft let cool and easily the skin peels of inshaAllah.then in a medium bowl start to mash gently.add the other ingredients the condenced milk, and combine well

  3. 3

    Add the coconut powder and microwave briefly nit to boil just warm thru well and in order to mix in well

  4. 4

    Now you can add the cinnamon powder and as per consistancy at this point add slowly fresh milk and stir in or whisk as prefer the smooth,but fork may just do the work if you don't mind rustic and more home made look and not too lush. It's up to you for final presentations.garnish with pista nuts or of choice
