A few years ago, my friend, Jack, from church gave me this recipe for Apple Cake that his Aunt Mil always made. As soon the weather turns to fall, I have a yearning to make this cake. It always tastes delicious and is very easy to make. Thank you, Jack, for sharing your aunt’s recipe with me. It has brought joy to me and to all those who have tasted this Fall treat!

Ingredients

1 and 1/2 hours
12-15 people
  1. 2 cupssifted flour
  2. 1 teaspoonbaking soda
  3. 1and 1/2 teaspoons cinnamon
  4. 1 cupvegetable oil
  5. 1and 3/4 cups sugar
  6. 3eggs
  7. 1 teaspoonvanilla
  8. 4medium apples, peeled and coarsely chopped (I like Golden Delicious)
  9. Optional: 1/2 teaspoon Apple Pie spice (I add this to the apples. It is not in Aunt Mil’s recipe)
  10. 1/2 cupchopped walnuts, toasted

Cooking Instructions

1 and 1/2 hours
  1. 1

    Set oven to 350 degrees.

  2. 2

Spray a 9x13 baking pan with baking spray.

  3. 3

Sift together flour, baking soda and cinnamon. Stir to be sure that it is thoroughly mixed. Set aside.

  4. 4

Combine vegetable oil, sugar, eggs, and vanilla. Stir in flour mixture.

  5. 5

Add optional Apple Pie Spice to apples. Stir gently.

  6. 6

Gently add apples and walnuts to the batter. Stir to combine. Don’t over mix.

  7. 7

Pour into baking pan and spread so that batter is evenly dispersed.

  8. 8

Bake for 50 minutes. Check for doneness with a toothpick inserted into the center of the cake.

  9. 9

(Note: This is a good snacking cake as is, but you could up it a notch by topping it with a cream cheese icing and sprinkling some toasted chopped walnuts on top).

I am a retired school library media specialist living in southern Indiana. I spent a number of years working in schools around the world and have lived in Germany, Turkey, Saudi Arabia, and Japan. I enjoy travelling, reading, and eating great food. I especially enjoy the challenge of re-creating dishes that I discover when I read a book. My last creation based on a book was a “Waves of the Danube” cake which was mentioned in "People of the Book" by Geraldine Brooks. It was absolutely decadent and delicious. I have always been in love with cooking and pie baking comes easy to me. I find that baking soothes me in times of stress. The first time I bake something I always follow the recipe exactly to see how it turns out. Afterwards, I will analyze it and make changes if I feel that the recipe could use some tweaking before I make it again. My cooking skills come from my Polish American family roots in Detroit, Michigan and its suburbs. My brother and sisters are all great cooks and they absorbed many of the lessons learned while they were growing up. Check out my blog. Find it at http://apolishkitchen.blogspot.com
