Falafel, Fried Chickpea Balls

Falafel
Falafel is very popular in the Middle East and is served as fast food as well as a snack. These are balls made from chickpeas, though they can also be made with fava beans. They are usually served inside pita bread with a salad of lettuce, tomatoes, cucumbers, red bell peppers, spicy sauce, and drizzled with tahini or tzatziki sauce. They can also be served on their own with dipping sauces.
Falafel has been part of Arab and Jewish diets for centuries.
Traditionally, chickpeas are soaked overnight, drained, and then ground raw after softening in water.
I prefer to use cooked chickpeas.

MAKE THE CHICKPEA BALLS
In a food processor, blend the chickpeas well. Add and mix in the remaining ingredients.
Form 20 balls, each about 1 1/2 inches (3.5 cm) in diameter.
Fry the balls in oil. - 2
MAKE THE TAHINI SAUCE
Mix the tahini with water, lemon juice, and salt until creamy. Serve in a small bowl.
Tahini is made from toasted sesame seeds that are ground and mixed with oil. - 3
MAKE THE TZATZIKI SAUCE
In a bowl, mix the yogurt with garlic, lemon juice, cucumber, salt, pepper, and dill or mint. Serve in a small bowl. - 4
HOW TO SERVE
You can serve the falafel on a plate with a salad of lettuce, tomatoes, cucumbers, and red bell peppers, along with both sauces. Serve with pita bread. - 5
POPULAR WAY TO SERVE
Fill pita bread with a mixed salad of lettuce, tomatoes, cucumbers, and red bell peppers, and yogurt sauce. Place falafel balls on top and drizzle with tahini or yogurt sauce. Serve on a plate. - 6
NOTE
Prepare the sauces and salad before frying the falafel balls.
You can also serve them as a snack without sauces if you prefer.
