Baked Salmon and Vegetables in Foil

I used to use just mayonnaise but I added easy melting cheese. It was so nice so I have used only this recipe since then.

Slice the onion and carrot thinly. Cut the green pepper into thin batons. Separate the shimeji mushrooms into bite sizes.

Take a big piece of foil and grease lightly with paper towels.

Place the onion and salmon. Scatter easy melting cheese.

Scatter the shimeji mushrooms, carrot and green peppers on top. Squirt mayonnaise to your liking.

Scatter more easy melting cheese and seal the foil tight.

Cook in a toaster oven for 15 to 20 minutes.

It is nice to serve with ponzu sauce.
