Sort and rinse the lentils. Soak the rice in water. Peel and finely chop the onions.

Add water and lentils to a pot and bring to a boil. Add salt, reduce the heat, and let the lentils cook until very tender. Then add the rice. Meanwhile, fry the onions in oil until golden brown (I like to brown them a bit more for extra flavor). Stir the pot regularly and watch to prevent sticking. When the rice is cooked and the mixture thickens, add the fried onions. Boil for five more minutes, then it's ready to serve.

Spoon into bowls and let cool. It's best not to overcook the lentils, as the dish will thicken as it cools.

I served it with a lettuce and vegetable salad. Enjoy!
