Add yeast and sugar to 1 glass of warm water and cook the yeast for a while until it swells and foams.

Let it wait.

Put the halloumi, flour, salt, olive oil, basil, fresh and dried mint in a deep bowl.

Add the rising yeast to the mixture and add warm water little by little until the dough reaches the consistency of an earlobe.

Knead well until it becomes a little softer.

Shape the dough into balls and place them on a greased baking tray.

Leave it on the tray in a warm environment (heated and turned off oven) for 1-2 hours or until it rises.

Remove the tray from the oven and heat it at 200 degrees.

Bake the olives in the heated oven for 1- 1 1⁄2 hours or until the top is golden brown.

Serve hot or cold.
