Stewed Freeze-Dried Tofu and Spinach

For days when you have plenty of spinach on hand, but want to eat it differently to keep from getting sick of it.
This time, I stewed it with freeze-dried tofu.

Adjust the amount of salt to taste, from 1/3 to 1/2 teaspoon.

Don't reconstitute the freeze-dried tofu with boiled water.
It will break apart when stewing. For serving 2. Recipe by *Anna*

Ingredients

2 servings
  • 1 bunchSpinach
  • 1 blockFreeze-dried tofu
  • 400 ml* Dashi stock
  • 2 tbsp* Sugar
  • 1 tbsp* Mirin
  • 1/2 tbsp* Usukuchi soy sauce
  • 1/3to 1/2 teaspoon *Salt

Steps

  1. 1

    Cut spinach into 4 cm lengths.

    Reconstitute the freeze-dried tofu in water or luke-warm water and cut into 8 equal parts.

    Put the ingredients marked with a * in a pot and boil.

    Once it boils, add the tofu, cover with a lid slightly opened on one side, and simmer over low to medium heat for 7 to 8 minutes.

    Uncover and add the spinach.

    Once the spinach becomes tender, boil for about 5 more minutes and serve.
