This is a hearty item for a bento.

Please adjust the amount of yuzu pepper paste to taste. I use about 1 cm out of a tube (about 1/2 teaspoon).

Ingredients

  1. 2 slicePork (thinly sliced)
  2. 1King oyster mushroom
  3. 1● Yuzu pepper paste
  4. 1Umeboshi
  5. 2 tbspWater
  6. 1 tbsp○ Shiro-dashi
  7. 1 dash○ Salt and pepper
  8. To taste
  9. 1White sesame seeds

Cooking Instructions

    Rinse the mushroom lightly and wipe dry. Cut into 4 pieces. Chop up the de-pitted umeboshi plum. Combine the ○ ingredients.

    Spread the combined ● ingredients on the mushroom pieces, and wrap each piece with the pork.

  3. 3

    Dust the pork-wrapped mushroom pieces with katakuriko (the photo shows the recipe doubled).

    Pan fry with the seam sides down. Fat will come out of the pork so you don't have to add any oil to the pan.

    When the meat is browned all over, add the ○ ingredients and coat the pieces in it.

  6. 6

    Simmer over high heat while rolling the pieces around until the moisture has evaporated, and they're done.
