Used a whole catfish, deboned it, and made a quick rice porridge. The broth is just as sweet and flavorful as if simmered with pork bones.

Place the whole catfish in water and briefly boil it, then remove the fish. Debone the fish and use the bones to simmer in the water with 1 cup rice (about 200 grams) for 30 minutes, until the rice is fully cooked and soft.

Once the rice is very soft, season to taste. Add the fish meat back into the pot and gently stir.

When serving, add chopped Vietnamese coriander (rau răm) and sprinkle black pepper on top.
