Soto Sulung and also known as Soto Madura made with beef and offal in a yellowish transparent broth.
Cooking Instructions

Prepare ground spices and other spices, set aside. Bring the water to a boil, boil the meat for 15 minutes, remove and discard the cooking water. Thinly slice the meat and set aside.

Blend the spices and stir-fry the spices until fragrant. Add galangal, lemongrass, bay leaves, and lime leaves, stir until fragrant, set aside.

Bring the water to a boil, re-boil the sliced meat with cardamom, cloves, star anise and cinnamon. Add the stir-fry spices, sugar and salt. Taste and correct the flavour. Cook until the meat is cooked and tender.

Add the whole celery, let it simmer for a while and switch off the heat.

Serve Soto Sulung with sliced hard-boiled eggs, lime juice, a sprinkling of fried onions and spring onions and chilli paste. Enjoy!
