Ingredients

  1. 500 gramsmeat beef
  2. 2 stalklemongrass, mashed
  3. 3 cmgalangal, mashed
  4. 2 pcsbay leaves
  5. 4 pcskefir leaves
  6. 3 pcscardamom
  7. 2 pcsstar anise
  8. 3 cmcinnamon sticks (me: 1/4 tsp cinnamon powder)
  9. 2 pcscloves
  10. 1 stickscelery
  11. 2 tspsugar
  12. 1 tbspsalt
  13. 1.5 litreswater
  14. 2 tbspoil
  15. Ground spices:
  16. 1 pcsshallots (large)
  17. 3 clovesgarlic
  18. 3 pcscandlenut / 1.5 pcs cashew nut
  19. 2 cmginger
  20. 2 cmturmeric (me: 1 tsp turmeric powder)
  21. Complementary:
  22. Fried onion
  23. Spring onion, sliced
  24. Boiled egg
  25. Lime juice

Cooking Instructions

    Prepare ground spices and other spices, set aside. Bring the water to a boil, boil the meat for 15 minutes, remove and discard the cooking water. Thinly slice the meat and set aside.

    Blend the spices and stir-fry the spices until fragrant. Add galangal, lemongrass, bay leaves, and lime leaves, stir until fragrant, set aside.

    Bring the water to a boil, re-boil the sliced meat with cardamom, cloves, star anise and cinnamon. Add the stir-fry spices, sugar and salt. Taste and correct the flavour. Cook until the meat is cooked and tender.

    Add the whole celery, let it simmer for a while and switch off the heat.

    Serve Soto Sulung with sliced hard-boiled eggs, lime juice, a sprinkling of fried onions and spring onions and chilli paste. Enjoy!
