Aloo Baingan Methi with Kasundi is a flavorful and nutritious side dish .It is a medley of vegetables that combines stir fried potatoes and eggplant along with fresh fenugreek leaves and tempered with cumin, fennel, methi seeds and dry red chilli. Garlic and onion stir fried makes the dish all the more flavourful. This dish pairs very well with dal and rice or any Indian flatbread.

Pluck the methi leaves from the stems and chop finely.Wash 2-3 times to remove any dirt.Squeeze out water in a strainer. Set aside.Peel and cube potatoes into 1 inch cubes.Steam or parboil them.Heat oil in a wok or pan.Stir fry the cubed baingan / eggplant smearing 1/4 th tsp salt till soft.Set aside.In the remaining oil stir fry the potatoes. Set aside.

Add 1 tsp more oil and temper it with suggested tempering.When they splutter, add minced garlic. Saute till aromatic. Add chopped onion and saute till translucent.Add the fried potatoes and fry 2 minutes.

Next add the chopped methi leaves.Add turmeric and red chilli powder, salt and sugar to taste. Mix everything well.Cook for 5 minutes on medium flame till potatoes and eggplant are cooked through.

Sprinkle kasundi or mustard sauce and sesame seeds.Give it a stir and serve it hot with rice or roti in lunch or dinner.
