Clean the squid by rubbing with salt and vinegar to remove any fishy smell. Sauté the minced onion and garlic until fragrant, then add the fresh squid and stir until it firms up. Add water, fish sauce, bouillon powder, turmeric powder, and ground black pepper. Simmer the squid, adding plenty of water to create a flavorful broth.

Blanch the fresh noodle sheets in boiling water until tender. Wash the herbs and let them drain. Cut some lime to serve on the side.
