Pour the canned fish into a bowl, separating the fish from the sauce (you can add the sauce if you like, but personally, I find it too watery). Pour hot water over the fish to remove the sauce clinging to it.

Drain the water and flake the fish to your desired texture, either coarse or fine.

Season with fish sauce, lime juice, toasted rice powder, and chili powder. Taste and adjust as you like (if using instant larb seasoning, just mix it in).

Add the sliced shallots, green onions, cilantro, and mint leaves, and mix well.

Serve on a plate with your choice of vegetables.
