  • 1 (10 oz)can Rotel Fire Roasted diced tomatoes
  • 1 (10 oz)can Rotel Original diced tomatoes
  • 1/2 (8.11 oz)jar La Costena Diced Chipotle Peppers
  • 1/2large sweet onion
  • 1-2jalapenos
  • 2 tbspminced garlic
  • 1 1/2 cupsfresh cilantro
  • 1lime - juice only
  • Salt to taste
  • Pinchsugar
  • Cumin (optional)

  1. 1

    Drain both cans of Rotel. Loosely chop onion and jalapeno.

  2. 2

    Combine all ingredients (except for salt) in food processor or blender. Pulse until salsa reaches desired thickness (usually 15-20 pulses).

  3. 3

    Empty salsa into large bowl. Stir in salt to taste (1-2 tsp).
